Gluten Free Morning Glory Egg Cups

Equipment

  • 1 Muffin Pan
  • 1 Rolling Pin
  • 1 Skillet
  • 1 Basting Brush
  • 1 Bowl

Ingredients
  

  • 6 Eggs I did half this recipe with egg whites
  • 6 Slices of Gluten Free Bread
  • 6 Cherry tomatos
  • 2 Shallots/ chopped Trim and sliced small
  • 6 slices Gluten Free Turkey Bacon or Gluten Free Ham chopped If you use gluten free ham depending you would need two slices or half a package of the gluten free ham cubes
  • 1/3 cup Spinach chopped
  • 1/2 cup Shredded Cheddar Cheese/ or White Cheese of choice Fat free cheese works but doesn't melt as well
  • 1/2 tsp Salt or season to taste
  • 1/4 tsp Ground black pepper or season to taste
  • 1 tbsp Butter/ Melted to brush each muffin tin You can also use a cooking spray/ or yogurt butter
  • 1 tbsp Butter to melt

Instructions
 

  • Preheat oven to 375
  • Grease with melted butter or cooking spray each muffin tin
  • Use a rolling pin to flaten out the 6 pieces of Gluten Free Bread, then press each gluten free bread into a greased muffin pan. ( Trim off the crust if you prefer) Brush with melted butter
  • Rinse and chop the shallots and baby spinach,
  • Chop and lightly brown the gluten free bacon or gluten free ham in a skillet with cooking spray
  • Melt 1 tablespoon butter in skillet over medium heat
  • Add 1 small sliced shallot and cook stirring until soften 2 to 3 minutes
  • Remove from heat and add chopped cooked gluten free turkey bacon or gluten free ham and 1/3 cup spinach add evenly to muffin tin cups
  • Add shredded cheddar.
  • Crack eggs on top of each muffin tin, season with salt and fresh ground pepper and bake at 375 for 20 minutes or until eggs look done.

Notes

These little breakfast bundles take 20 minutes to put together and 20 minutes to bake.
First press gluten free bread into greased muffin pan then fill them with shallots, baby spinach,  gluten free turkey bacon or gluten free ham, add cherry tomato's on top and shredded cheddar. Crack eggs on top bake at 375 for 20 minutes or until eggs look done.
Preheat oven at 375
Brush 6 muffin cups with melted butter or use a cooking spray
With a rolling pin slightly flatten 6 slices of gluten free bread ( you can trim off the crust if you like)
Press into prepared cups brush again with a little butter or spray with a cooking spray
Filling Mix
Melt 1 tablespoon butter in a small skillet over medium  heat
Add 1 small sliced shallot and cook stirring util soften 2 to 3 minutes
lightly brown gluten free turkey bacon or gluten free ham ( you could also use gluten free sausage )
Remove from heat and stir in 1 1/2 ounces chopped cooked gluten free turkey bacon or gluten free ham and 1/3 cup chopped spinach 
Add Eggs evenly among cups
1 large egg into each 
Season with salt and fresh ground pepper 
Cook
Bake until egg whites are almost set, 15 to 20 minutes.
Let stand 5 minutes before serving.
If your use gluten free ham you would need two slices or half a package of the gluten free cube ham
I did half of this recipe with egg white's it's what I tolerated best.
