Preheat oven to 375
Grease with melted butter or cooking spray each muffin tin
Use a rolling pin to flaten out the 6 pieces of Gluten Free Bread, then press each gluten free bread into a greased muffin pan. ( Trim off the crust if you prefer) Brush with melted butter
Rinse and chop the shallots and baby spinach,
Chop and lightly brown the gluten free bacon or gluten free ham in a skillet with cooking spray
Melt 1 tablespoon butter in skillet over medium heat
Add 1 small sliced shallot and cook stirring until soften 2 to 3 minutes
Remove from heat and add chopped cooked gluten free turkey bacon or gluten free ham and 1/3 cup spinach add evenly to muffin tin cups
Add shredded cheddar.
Crack eggs on top of each muffin tin, season with salt and fresh ground pepper and bake at 375 for 20 minutes or until eggs look done.
