Easy Salted Caramel Apple Muffins Made Gluten Free
These easy salted caramel apple muffins made gluten-free are a delicious treat that is perfect for fall! I made these muffins and they turned out so delicious. In the fall pumpkin seems to get all the attention, I think some forget about the apples, and apples make so many great fall desserts.
These muffins have a light and fluffy texture, because of the combination of gluten-free flour, baking soda, and baking powder. Unsweetened applesauce and diced apple pieces add natural sweetness and moisture to the muffins. The caramel goes well with many fall flavors such as pumpkin, apple, chocolate, and vanilla.
I used sugar in this recipe as a natural sweetener, the Cinnamon adds a warmth and depth of flavor, to these muffins. Adding some salt balances out the sweetness from the sugar and apples.
I made these muffins gluten-free by using oat flour and gluten-free ingredients.

Ingredients:
- 2 cups gluten-free oat flour
- 1/4 cup gluten-free oats
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup unsweetened applesauce
- 2 eggs
- 1 tablespoon vanilla extract
- 1 apple, peeled and diced
- 1 bag caramels to melt
- Kosher Salt or popcorn salt to sprinkle on top of the muffin
Instructions:
- Preheat the oven to 350°F. Line a standard 12-cup muffin tin with foil baking cups and spray or spray the pan with a nonstick cooking spray.
- In a large bowl, whisk together the gluten-free flour, gluten-free oats, baking soda, baking powder, salt, sugar, and cinnamon.
- In a separate bowl whisk together the applesauce, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the diced apple.
- Divide the batter evenly among the prepared muffin cups, using a 1/4 cup measuring cup.
- Bake for 18-20 minutes, or until a cake tester inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool.
- Once cooled drizzle melted caramel over the top of the muffin and sprinkle with a Kosher salt or popcorn salt.
How To Melt Caramels:
- Melting caramels on the stove: Place a bag of unwrapped caramels into a medium-sized saucepan. Add 2 tablespoons of heavy cream and cook the caramels over medium-low heat for 10 to 15 minutes, stirring frequently with a rubber spatula. Add more milk or cream for a thinner consitancy.
- Microwaving caramels: Place 14 ounces of soft caramels into a microwave-safe dish and add 2 tablespoons of milk or heavy cream. Microwave for 1 minute on high and stir until caramels are melted.
- Using a slow cooker: Put a heat-safe bowl into the slow cooker and add unopened soft caramel candies and milk. Pour water into the slow cooker until it reaches halfway up the side of the bowl. Cook on low heat for 2 hours stirring occasionally, until caramels are melted and smooth.
Tips For Making Gluten Free Muffins:
- The gluten-free dough is sticky I usually don’t use muffin paper or tin until after the muffin is cooled, I then place the muffin in the paper.
- Each oven bakes differently so you’ll need to watch the time.
- Coconut Sugar works well in this recipe as well as maple syrup and other low-calorie baking sugars.

- 1 microwave safe bowl for the caramel
- 1 Double Bowler for the caramel
- or a slow cooker for the caramel
Ingredients
- 2 cups Gluten Free Oat Flour I use Bob's Red Mill Gluten Free Oat Flour
- 1/4 Cup Gluten Free Oats Regular gluten-free oats
- 1 1/2 tbsp Gluten Free Baking Powder
- 1/2 tsp Gluten Free Baking Soda
- 1/4 tsp Salt Table salt for the recipe
- 1/2 cup Sugar
- 1/2 tsp Cinnamon
- 1 cup Unsweetened Applesauce
- 1 tbsp Vanilla
- 2 Eggs
- 1 Medium size apple diced up I use what ever apple I have on hand
Caramel To Drizzle On The Top of The Muffin
- 1 Bag Brach's Caramels
- 2 tbsp Heavy Cream or Milk you may use more as desired
- Kosher Salt or Popcorn Salt to sprinkle on top of muffin
