Welcome back to The Saturday Scoop 23!!!

Happy 4th of July week!!!!

Where did June go! Honestly I’m so behind on everything! I’m going to blame it on the June weather! We did have a lot of rain and then humidity… right! Well that’s my story and I’m sticking to it!

So have I got exciting news! My son Christopher from Seattle came home on Sunday!!! We had not seen him since the July before the pandemic started. It’s been three years! I can not even express how excited we all are! This is why the Saturday Scoop 23 is coming out late!

Last week on Monday he zoom called me and said hi mom what are you doing, I was working, but said oh nothing. You know when you child calls you always make time! Well he said I have a proposal, I really want to see you and dad. I want to buy plane tickets and flying you and dad out to Seattle next week or I’ll come home for a week!

After talking for a bit he decided to come home so he could visit with Nona and see the rest of the family! My husband and I will fly out at another time hopefully this fall! So you know what I had been doing, all week was preparing and preparing!

I got the guest room all ready with fresh sheets, light blankets, wash cloths and towels. Adding some soaps, tooth brush, tooth paste, shaving cream, and some lotions in a basket. I also created a little basket with treats that I know he likes, just to have in the room. I had him place an order with Kroger with drinks and specialty foods he would want to have at the house. On Saturday the day before he arrived I picked up the order. It was so convenient ! This way I’d have items at the house he would enjoy!

Sunday evening when he arrived we had a nice dinner of Chicken parmesan, salad, mixed vegetables, and garlic bread. The weather was so nice we ate on the patio which is always nice!

I feel so blessed to have him home!!!

On Monday we had family over for the 4th. A few weeks ago I ordered the cutest melamine dinner plates, salad plates, and napkins from Belk. They are so cute! I also found a really nice table cloth at Walmart and bamboo napkin rings! The napkin rings match my bamboo placemats, the one’s I use all the time! The plates were on sale and such a great price! I plan on using them for many summer meals!

Gluten Free Dessert

You know I’m all about the dessert! So of course we will have some desserts this week! I was really pressed for time so I kept it simple for the holiday! A very favorite dessert we have in the summer is gluten free waffle ice cream Sundays. It is so simple to make and yummy! We use store bought waffles and our favorite ice cream. Toast 2 waffles once done add 2 scoops of ice cream placed on top of the waffle. Add the other waffle on top. Add toppings such as fruit, chocolate or caramel syrup with a little dollop of cool whip! It’s one of our favorite summer desserts!

A store bought cake can look homemade too by adding a few items to the cake! Gluten free sometimes is a little challenging to find. So this is why I keep boxed cakes, cookies and muffins on hand!

Amazon Prime Day!

I’m sure you have heard all the excitement about the Amazon Prime Day Sales. This is suppose to be bigger than Black Friday sales. It’ starts this coming week! Going Gluten Free:

On Wednesday I posted on the blog 7 tips for Easy Gluten Free Traveling This Season. I also shared a few links for free gluten free app’s. These apps share area restaurants that have a gluten free menu. I also shared a link to a free medicine app just in case you need to look up medication on your trip. Some medicines contain wheat as it’s used for a filler and binder. It is a great app for checking, we can never be too careful!

Some updating I’m working on!

I’ve really wanted to update my bedroom for awhile now and I don’t want to spend a lot of money. So… I ordered a roll of wallpaper to do an accent wall, also order a new area rug. I’m thinking about just painting the trim work with a semi-gloss white paint. I found a cute chandelier on the market place I’m redoing. Pretty sure this will give me the updating I’m looking for! Once I get it done I’ll share with you how it turned out!

Gluten Free Oatmeal Pancakes with Blueberry Cherry Syrup

Calories 175 kcal

Equipment

  • 1 Medium size bowl
  • 1 Whisk
  • Measuring cups
  • Measuring spoons
  • 1 Wooden Spoon

Ingredients
  

  • 1/2 cup Oat Flour
  • 1/4 cup Gluten Free Oatmeal
  • 1 tsp Baking Powder
  • 2 tbsp Milk I use lactose free skim milk, you could use oat, almond, or soy
  • 2 tbsp Applesauce You could use yogurt to up the protein
  • 2 Large egg whites
  • 1 1/2 tsp Sweetener of choice I use fine sugar
  • 1 tsp Gluten Free Vanilla
  • Cinnamon a sprinkle

Instructions
 

Add all ingredients to a bowl and whisk together until smooth

  • Spray a large nonstick griddle or skillet with cooking spray and heat over medium to low heat. Drop batter by 1/4 cup onto skillet.
  • Cook until edges turn a light brown or pancake start's to bubble.
  • Flip pancake carefully to cook on the other side and continue with other pancakes.
  • Recipe makes 4 to 5 medium size pancakes.

Notes

Add all ingredients to a bowl and whisk together until smooth Spray a large nonstick griddle or skillet with cooking spray and heat over medium to low heat. Drop batter by 1/4 cup onto skillet.
Cook until edges of the pancake turn a light brown or pancake start’s to bubble.
Flip pancake carefully to cook on the other side and continue with the other pancakes.
Recipe makes 4 to 5 medium size pancakes.
Double the recipe to make more pancakes.
You could add pumpkin or a banana instead of applesauce or yogurt.
 
Syrup Cherry/Blueberry
1 cup cherries and blueberry’s mixed
1 tsp sugar
1 tsp water
Add ingredients to a pan cook over low heat for 5 to 7 minutes, 
Once done use a potato masher and mash berries, remove from heat and serve over pancakes.
